Production area: Salento hillock;
Soil: Limestone rocks with read-clay;
Grape variety: 100% Primitivo
Vinification:
After a late harvest which takes places in the last week of september, the bunches are hanged to dry for a period of four weeks in our cellar. After a soft press, maceration and fermentation take place in steel tanks for ten days. Final stage before is an aging of 6 months in French barrique.
Tasting notes
Colour: Bright, Deep red with purples hues.
Nose: Rich, complex with hints of candied fruits, sun-dried fruits, confiture and sweet spicy notes;
Taste: Full-body, warm and slightly sweet.
Food pairing: It pairs with cookies or almond cakes. Also indicated for aged cheeses abd grilled meat
Serving:
Best served at 16° – 18° C.
Alcohol: 16 % Vol.
