Placed in the heart of a living-rock, the ‘Tenute Girolamo’s’ cellar has the charm of a place without time. It is in here that the wine acquires that incredible variety of aromas and flavours. In the estate’s cellar, in barriques and tonneau of the highest quality, Bacco’s” nektar ages slowly and develops complexity.  Constantly monitored at a temperature of 16-18 degrees and surrounded by a total silence, the wines complete the process of maturation, which refines all its extraordinary organoleptic qualities. Entering inside the ‘Tenute Girolamo’ cellar means to be wrapped by a mix of scents that liberate the spirit and stimulate the palate to experience senses of exceptional impact. For long months the wine is gently cradled. During this time the batonnage and the contact with wood allow a homogeneous and continued oxygenation. Thanks to this long and patient waiting, the Tenute Girolamo Estate has obtained an inimitable wine of the highest quality that characterizes the professionalism and commitment of the Company.
